  • 1 tablespoon Sri Lankan roasted curry powder (or regular curry powder)

  • 1 cup coconut milk

  • 2 tablespoons vegetable oil

  • Salt to taste

Instructions:

  1. Heat the vegetable oil in a pan over medium heat. Add mustard seeds, fenugreek seeds, cinnamon stick, cardamom pods, and cloves. Sauté until mustard seeds start to pop.

  2. Add chopped onions and sauté until they turn translucent.

  3. Add minced garlic, ginger, green chilies, and curry leaves. Sauté for a minute or until fragrant.

  4. Add turmeric powder, chili powder, and roasted curry powder. Mix well to coat the spices on the onions.

  5. Add chopped tomatoes and cook until they soften and become a part of the sauce.

  6. Pour in the coconut milk and bring the mixture to a gentle simmer.

  7. Add the prawns and cook until they turn pink and are cooked through. Be careful not to overcook them, as they can become tough.
