Chennai Fish Curry Recipe:

Ingredients:

500g fish (any firm white fish like kingfish, snapper, or tilapia, cut into pieces)

2 medium-sized onions, finely chopped

2-3 ripe tomatoes, finely chopped

2-3 green chilies, slit

1 tablespoon ginger-garlic paste

1/2 teaspoon turmeric powder

1 tablespoon red chili powder (adjust to your spice preference)

1 teaspoon coriander powder

1/2 teaspoon cumin powder

1/2 teaspoon mustard seeds

1/2 teaspoon fenugreek seeds (methi seeds)

A few curry leaves

2 cups coconut milk (or 1 cup thick coconut milk and 1 cup water)

2 tablespoons vegetable oil

Salt to taste

Fresh coriander leaves for garnish

Instructions:

Clean and wash the fish pieces thoroughly. Drain and set aside.

In a deep, heavy-bottomed pan, heat the vegetable oil over medium heat. Add the mustard seeds and fenugreek seeds. Let them splutter.

Add the chopped onions and sauté until they turn translucent.

Add the ginger-garlic paste and green chilies. Cook for a minute or until the raw smell disappears.

Stir in the chopped tomatoes, turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Cook until the tomatoes become soft and the oil starts to separate from the masala.

Now, add the coconut milk and bring the mixture to a gentle simmer. Let it cook for about 5 minutes to allow the flavors to meld together.

Gently add the fish pieces to the gravy and coat them with the masala. Be careful not to break the fish pieces.

Cover the pan and let the fish cook in the curry for about 10-15 minutes on low heat. The cooking time will depend on the thickness of the fish pieces.

Once the fish is cooked, adjust the salt and spice levels according to your taste.

Garnish with curry leaves and fresh coriander leaves.

Your delicious Chennai-style fish curry is now ready to be served! It pairs wonderfully with steamed rice or appam (a type of South Indian pancake made with fermented rice batter). Enjoy!

Remember, the best taste comes from using fresh and good-quality fish and authentic spices. Feel free to experiment with the recipe to suit your preferences.
