Sambar Recipe:
Ingredients:
1 cup toor dal (pigeon pea lentils)
2 cups mixed vegetables (like carrots, beans, eggplant, okra)
1 onion, chopped
2 tomatoes, chopped
1 tablespoon sambar powder
1/2 teaspoon turmeric powder
Tamarind pulp (size of a small lemon)
Salt to taste
Water
Coriander leaves for garnishing
Instructions:
Cook the toor dal in a pressure cooker until soft and mushy.
In a large pot, cook the chopped vegetables with some water until they're tender.
Add the cooked dal to the pot of vegetables and mix well.
Add tamarind pulp, sambar powder, turmeric powder, and salt to the mixture. Let it simmer for about 10-15 minutes.
In a separate pan, heat oil and add mustard seeds. When they splutter, add curry leaves, chopped onions, and sauté until onions turn golden brown.
Add chopped tomatoes and cook until they become soft and mushy.
Add this tempering to the simmering dal and vegetable mixture. Let it all cook together for a few more minutes.
Garnish with chopped coriander leaves.
Red Rice Recipe:
Ingredients:
1 cup red rice
2 cups water
Salt to taste
Instructions:
Wash the red rice thoroughly under running water.
In a pot, combine the washed red rice, water, and salt.
Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let the rice simmer for about 20-25 minutes or until the rice is cooked and water is absorbed.
Once the rice is cooked, fluff it gently with a fork.
Serve the sambar over the cooked red rice for a delicious and nutritious meal!
