Here's how you can prepare the mutton roast:
1. Heat the vegetable oil in a large heavy-bottomed pan or pressure cooker.
2. Add the chopped onions and sauté until they turn golden brown.
3. Add the minced garlic, grated ginger, and green chilies to the pan. Sauté for a couple of minutes until the raw smell disappears.
4. Next, add the chopped tomatoes and cook until they soften.
5. Add the red chili powder, turmeric powder, coriander powder, garam masala powder, and salt. Mix well to combine the spices with the onion-tomato mixture.
6. Add the mutton pieces to the pan and coat them well with the spice mixture.
7. If using a pressure cooker, add a little water (about 1/4 cup) and pressure cook for about 4-5 whistles or until the mutton is tender. If using a regular pan, add enough water to cover the mutton and cook covered on low heat until the mutton is cooked and tender (this may take about 1-2 hours, depending on the meat's quality).
8. Once the mutton is cooked, remove the lid and cook further on high heat to dry out any excess moisture, stirring occasionally. Allow the meat to roast in its own juices until it turns brown and slightly caramelized.
9. Once the mutton is roasted well, remove it from the heat.
10. Garnish with freshly chopped coriander leaves.
