To make Indian mutton curry, follow these steps:

Ingredients:

- 1 kg mutton, cut into pieces

- 2 onions, finely chopped

- 2 tomatoes, pureed

- 3 tablespoons vegetable oil

- 2 teaspoons ginger-garlic paste

- 2 teaspoons red chili powder (adjust according to spice preference)

- 1 teaspoon turmeric powder

- 1 teaspoon cumin powder

- 1 teaspoon coriander powder

- 1 teaspoon garam masala powder

- Salt to taste

- Fresh cilantro leaves for garnish



Instructions:

1. Heat oil in a heavy-bottomed pan or pressure cooker over medium heat.

2. Add chopped onions and sauté until they turn golden brown.

3. Add ginger-garlic paste and cook for a minute until the raw smell disappears.

4. Add the mutton pieces to the pan and cook until they are browned on all sides. Stir occasionally to prevent sticking.

5. Add the pureed tomatoes and cook until the oil starts separating from the masala.

6. Reduce the heat and add chili powder, turmeric powder, cumin powder, coriander powder, and salt. Mix well to coat the mutton evenly with the spices.

7. If using a pressure cooker, add a little water (about 1/4 cup) and close the lid. Cook for about 4-5 whistles or until the mutton is tender. If using a regular pan, add enough water to cover the meat, then cover and cook on medium heat until the mutton is tender (about 1-2 hours, depending on the meat's tenderness).

8. Once the mutton is cooked, sprinkle garam masala powder and mix well. Adjust the salt and spices according to taste.

9. Simmer for a few more minutes, allowing the flavors to meld together.

10. Garnish with fresh cilantro leaves.

11. Serve hot with steamed rice, naan bread, or roti.
