  • 500g beef, cubed

  • 2 cups basmati rice

  • 4 onions, thinly sliced

  • 3 tomatoes, chopped

  • 1/2 cup plain yogurt

  • 1/4 cup cooking oil

  • 2 tbsp ghee (clarified butter)

  • 4 cloves

  • 4 green cardamom pods

  • 2-inch cinnamon stick

  • 1 bay leaf

  • 1 tsp cumin seeds

  • 1 tsp fennel seeds

  • 1 tsp ginger paste

  • 1 tsp garlic paste

  • 1 tsp red chili powder

  • 1/2 tsp turmeric powder

  • 1/2 tsp saffron strands (soaked in warm milk)

  • Salt, to taste

  • Fresh coriander and mint leaves for garnish. Method

    1. Marination:

      • Mix yogurt, ginger paste, garlic paste, red chili powder, turmeric powder, and a pinch of salt.

      • Coat the beef cubes with this marinade and let it sit for at least 2 hours (overnight for better results).

    2. Rice Preparation:

      • Wash and soak the basmati rice for 30 minutes. Drain and set aside.

      • In a large pot, heat oil and ghee. Add cloves, cardamom pods, cinnamon stick, bay leaf, cumin seeds, and fennel seeds.

      • Once the spices release their aroma, add the soaked rice and sauté gently for a few minutes.

      • Add 4 cups of water and salt. Cook the rice until it's 70% cooked. Drain and set aside.

    3. Cooking the Beef:

      • In a separate large pot, heat oil. Add sliced onions and sauté until golden brown.

      • Add chopped tomatoes and cook until they turn soft and mushy.

      • Add marinated beef and cook until it's browned on all sides.

      • Add a cup of water, cover, and let the beef simmer until it's tender and the gravy thickens.

    4. Layering and Dum Cooking:

      • Grease the bottom of a heavy-bottomed pot with ghee to prevent sticking.

      • Start by layering half of the cooked beef at the bottom.

      • Layer half of the partially cooked rice over the beef.

      • Sprinkle some saffron milk, chopped mint, and coriander leaves over the rice.

      • Repeat the layers with the remaining beef and rice.

      • Drizzle the remaining saffron milk and some more mint and coriander leaves.

      • Seal the pot with a tight-fitting lid. You can use dough to seal it completely or place a heavy pan on top of the lid to prevent steam from escaping.

      • Cook on low heat (dum cooking) for about 20-25 minutes. This allows the flavors to meld together and the rice to absorb the aromatic essence.

    5. Serving:

      • Gently fluff the layers with a fork.

      • Serve the delicious Sri Lankan Beef Biryani hot, garnished with more fresh mint and coriander leaves.
