  1. Ingredients:

    • 1 cup rice

    • Tamarind pulp extracted from a small lemon-sized tamarind

    • 1/2 teaspoon turmeric powder

    • Salt to taste

    • 2 tablespoons oil

    • 1/4 teaspoon mustard seeds

    • 1/4 teaspoon fenugreek seeds

    • A pinch of asafoetida (hing)

    • 2-3 dried red chilies

    • 1 sprig curry leaves

    • 2 tablespoons chopped peanuts (optional)

    • 1 tablespoon chana dal (split chickpeas)

    • 1 tablespoon urad dal (split black gram)

    • 1/4 teaspoon cumin seeds

  2. Preparation:

    • Cook the rice and set it aside.

    • Soak the tamarind in warm water for 15 minutes, then extract the pulp and set it aside.

  3. Making the Puli sadam:

    • Heat oil in a pan, add mustard seeds, fenugreek seeds, and asafoetida. Allow the mustard seeds to splutter.

    • Add dried red chilies, curry leaves, chopped peanuts, chana dal, and urad dal. Fry until the dals turn golden brown.

    • Add cumin seeds and turmeric powder. Mix well.

    • Add the tamarind pulp and salt. Let it simmer for a few minutes until the raw smell of tamarind disappears and the mixture thickens.

    • Adjust the consistency by adding water if needed. Remember, it will thicken further when cooled, so keep it slightly thinner than your desired consistency.

    • Once the mixture reaches the desired consistency, turn off the heat.

  4. Combining with Rice:

    • Add the cooked rice to the tamarind mixture and gently mix it to coat the rice evenly. You can use your hands or a flat spatula.

    • Make sure the rice and tamarind mixture are well combined.

  5. Tempering:

    • In a small pan, heat a bit of oil and add mustard seeds.

    • Once they start spluttering, add a pinch of asafoetida and a few curry leaves.

    • Pour this tempering over the rice mixture and gently mix it again.

  6. Serving:

    • Your tamarind pulisadam is ready to be served! It's commonly enjoyed with a side of papad or any vegetable fry.
