For the Fish:

  • 2 yellow fish filets (6-8 oz each)

  • 1 teaspoon turmeric powder

  • Salt and pepper to taste

  • 2 tablespoons olive oil

For the Turmeric Glaze:

  • 2 tablespoons honey

  • 1 tablespoon Dijon mustard

  • 1 teaspoon turmeric powder

  • 1 teaspoon grated fresh ginger

  • 2 cloves garlic, minced

  • Juice of 1 lemon

  • Salt to taste

For the Roasted Vegetables:

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 zucchini, sliced

  • 1 red onion, sliced

  • 1 tablespoon olive oil

  • Salt and pepper to taste

Instructions:

Preheat the Oven:

  1. Preheat your oven to 400°F (200°C).

  2. Prepare the Fish:

    • Pat dry the yellowfish fillets using paper towels.

    • Mix turmeric powder, salt, and pepper in a small bowl.

    • Rub the spice mixture onto both sides of the fillets.

  3. Make the Turmeric Glaze:
