Ingredients:
- 500 grams boneless chicken, cut into small pieces
- 1 cup toor dal (split pigeon peas)
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit lengthwise
- 1 teaspoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- A handful of curry leaves
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Instructions:
1. Start by cooking the toor dal (split pigeon peas). Wash the dal thoroughly and add it to a pressure cooker along with 2 cups of water. Cook for about 4-5 whistles or until the dal is soft and mushy. Once done, set it aside.
2. In a large pan, heat oil over medium heat. Add the cumin seeds and mustard seeds and let them splutter.
3. Add the chopped onions and sauté until they turn translucent.
4. Add the slit green chilies and ginger-garlic paste. Sauté for a minute until the raw smell of the ginger-garlic paste disappears.
5. Add the chopped tomatoes and cook until they become soft and mushy. You can add a little salt at this stage to help the tomatoes cook faster.
6. Once the tomatoes are cooked, add the turmeric powder, red chili powder, and garam masala. Mix well and cook for a minute to release the flavors of the spices.
7. Add the chicken pieces to the pan and mix well to coat them with the spice mixture. Cook for about 5-7 minutes or until the chicken is cooked through and tender.
8. Now, add the cooked toor dal (split pigeon peas) to the pan. Mix well to combine the chicken and lentils.
9. Add salt according to your taste and adjust the consistency of the curry by adding water if needed. Cover the pan and let it simmer for about 10-15 minutes to allow the flavors to meld together.
10. Finally, add the curry leaves and give it a final stir. Cover the pan and let it cook for another 2 minutes to infuse the flavors of the curry leaves.
11. Garnish with fresh coriander leaves and remove from heat.
