Instructions:.     

In a large pot or kadhai, heat oil or ghee over medium heat. Add the whole spices (cinnamon sticks, cloves, cardamom pods) and sauté until they release their aroma.

Add the finely chopped onions and sauté until they turn golden brown.

Mix in the ginger-garlic paste and green chilies. Cook until the raw smell of ginger-garlic disappears.

Add the chopped or pureed tomatoes and cook until the oil starts to separate from the mixture.

Add the chicken pieces and mix well, coating them with the masala.

Season with turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Adjust the spices according to your taste preferences.

Stir the chicken and spices together, ensuring the chicken is evenly coated with the masala. Cook for a few minutes until the chicken starts to brown.

Add enough water to cover the chicken pieces and bring it to a boil. Reduce the heat to low, cover the pot, and let it simmer until the chicken becomes tender and fully cooked. This usually takes around 25-30 minutes, depending on the size of the chicken pieces.

Once the chicken is cooked, add garam masala and fresh curry leaves. Stir and let it cook for a few more minutes to incorporate the flavors.

Check for seasoning and adjust salt and spices if needed.

Garnish with fresh coriander leaves before serving.
